Roasted Onion Burger Balls with Big Mac Sauce

A great way to make an easy, crowd pleasing dinner for the whole family, keto or not! Drizzled with delicious mac sauce, dinner-here we come!

Redefining ‘classy’ dining. Without mention of the famous restaurant, most of you will be familiar with this sauce, and a quick internet search proves that it is a well sought after recipe! After much playing around, I came up with a great copycat, that I often make in a larger batch, planning for my salad the next day (makes a delicious burger/cobb salad!). BUT, as all great recipes happen, I made this dinner by request one night and found the fridge to be quite empty…so I mixed up this ‘easy mac sauce’ version and while it is no where near a culinary masterpiece, I’m not ashamed to admit that I’ve recreated this more often than the intended sauce! I’ve included both sauce versions below for you to choose from. No judgement allowed in this kitchen!

Catering to the masses. Many times, when one member of the family has an eating restriction, by nature or choice, it can feel like a burden when cooking. Dishes like this are a great way to focus on one main dish, and accommodate the crowd with various side dishes and pairings! In this case, as I was cooking with a muffin tin, I filled the remaining slots with baby potatoes, and served with veggie fixings and buns for all to choose. A great idea for hosting a ‘build your own’ type of spread!

Roasted Onion Burger Balls with Big Mac Sauce

Equipment

  • Mixing bowls
  • Kitchen knife
  • Muffin Tin or secure with toothpicks

Ingredients
  

Burgers

  • 1 large Onion
  • 1 pound Ground Beef
  • 1 large Egg
  • 2 strips Bacon
  • 1 clove Garlic
  • 1 medium Jalapeno
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Italian Seasoning
  • Salt and Pepper
  • 6 cubes Cheese I used half pepperjack and half colby

Fancy Big Mac Sauce

  • 2 baby Pickles or relish
  • 2 tbsp Mayo
  • 1 tsp Yellow Mustard
  • 1 tsp Apple Cider Vinegar
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Paprika
  • Salt and Pepper
  • Sweeter optional

Easy Big Mac Sauce

  • 2 tsp Mayo
  • 1 tsp Ketchup I use no sugar added
  • 1 tsp Yellow Mustard

Instructions
 

Burger

  • Take onion, trim ends, and slice in half vertically (sitting on end). Peel apart layers to make little 'cups'. Set aside.
  • In mixing bowl, combine the inside of the onion remains, garlic, chopped jalapeno, chopped raw bacon, and seasoning.
  • Add ground beef and egg. Before getting your hands messy, cube your cheese!
  • Mix beef well press a cheese cube inside the center. Take a set of the same onion layer and stick on each side, fully surrounding the ball. Repeat until onion layers are used (mine made 6 balls).
  • To bake, place balls inside muffin tin to hold. If they are bigger than that size, be careful of liquid spilling over and place baking sheet under.
  • *Use any leftover space in the muffin tin to roast potatoes or veggies for your side dish!*

Fancy sauce

  • Take your baby pickles and chop in small pieces, adding to a mixing bowl. Add mayo, mustard and apple cider vinegar.
  • Season and mix well. Add sweetener if desired (depending on relish/pickle choice).

Easy sauce

  • No shame in this-I actually prefer it a lot of the time!!
    Mayo, mustard and ketchup-mix well. Easy and delicious!

Enjoy!

  • Take burgers out of the oven, and carefully using a spoon, scoop out of the tin. Serve with lettuce, tomato and a drizzle of sauce. Enjoy!
    Great for everyone, carb conscious or not! Serve with buns and a side of roasted potatoes!
