Greek Garden Salad with Grated Tomato Vinaigrette

Another way to eat your tomatoes!! This easy dressing breaks down a tomato into an easy sauce, perfect over veggies, pasta, or for dipping!

A time to have thick skin. One common question when cooking with tomatoes is the proper treatment of the skin. When raw, this can be great to keep on to help hold the structure, and also with roasting, providing framework. But with many sauces or dressings, I like to remove them, either by immersion blender to finely chop, or simply taking them off. Here, as the tomato is sliced, the skin will peel back, naturally removing the skin as you grate, leaving a very delicate tomato sauce!

It all starts with a good base. Many times, across a lot of topics, the name of the game is not reinvented, just adjusted to the current need. The same is true with cooking! Once you find your few tried and true go-to sauces, many recipes are just variations of the same. This base is quick, easy, and best of all, incredibly versatile! If you are tossing into a cold pasta salad with olives and artichokes, maybe use some fresh thyme and basil, or serving over some roasted vegetables might be perfect for a clove or two of raw garlic. Make this your own based on how you are serving it!

Equipment

  • Vegetable Grater
  • Mixing bowl

Ingredients
  

Vinaigrette

  • 1 large Tomato Pick a quality tomato here!
  • 1/2 squeezed Lemon
  • 1 tbsp Olive Oil
  • Salt and Pepper

Salad

  • 4 handfuls Mixed Greens
  • 1/4 medium Cucumber
  • 1/4 large Green Pepper
  • 1/4 medium Red Onion
  • 2 tbsp Sliced Kalamata Olives
  • 1/3 cup Feta Cheese
  • Hard Boiled Egg (optional)
  • Avocado (optional)
  • Chicken or Salmon (optional)

Instructions
 

  • Place grater over mixing bowl and grate tomato, holding the stem side. As the tomato grates, the skin will separate-keep the skin removed.
  • Squeeze lemon juice over tomato, and add olive oil, salt and pepper. Mix well. Set aside.
    *could be made ahead of time and kept in the refrigerator.
  • Assemble salad ingredients on plates and drizzle tomato vinaigrette over. Enjoy!
    Variation: depending on how you are using this sauce, could be great with a clove of garlic or any fresh herbs!
