Strawberry and Tomato Bruschetta with Goat Cheese

A wonderful balance of sweet and savory, this bruschetta is great over a low carb chaffle, your favorite crusty bread, or on a grilled entrée!

A time to get a little cheesy! Bruschetta is one of my favorite foods, especially because you can make this in so many ways (check out some of my experiments with olives, caramelized onion and cherry, and butternut squash)! For this summer version, I decided to tackle the sweet strawberry, and with that came the dilemma of cheese. Attempting to play up the sweetness of the berry, I opted for goat cheese, which did lend a sweet helper. But, if you want the same combo emphasizing the savory a little more, I would stick with the trusty feta here. It dances very well with the salty kalamata olives!

All about that base. In this picture, you will notice a huge difference from my other bruschetta…yup, the bread base. Feeling sympathy for my non-carb eating friends, I decided to try this as a lower carb version. A ‘chaffle’ is just a cheese and egg waffle, often used as a bread substitute. These are a great option for those that are avoiding bread, and work well here! I was worried that this delicious appetizer would be a no go if carbs were out, but was pleasantly surprised by the swap here. That being said, any bruschetta lover will agree, it is tough to replace the crunchy deliciousness of a great baguette! Take pride in your bread and eat to your heart’s content!

Strawberry and Tomato Bruschetta with Goat Cheese

  • Mixing bowl
  • Kitchen knife

Ingredients
  

  • 2 cups Strawberries
  • 1 cup Cherry Tomatoes
  • 2 cloves Garlic
  • 2 tsp Olive Oil
  • 1 tbsp Balsamic Vinegar (or glaze)
  • 1/4 small Red Onion
  • 1/3 cup Kalamata Olives
  • 6 leaves Fresh Basil-additional for garnish
  • 2 oz Goat Cheese (or Feta)
  • 1/3 cup Ricotta Cheese
  • Salt and Pepper
  • 1/2 loaf Baguette
  • Chaffles (if keto, optional) One egg, Italian seasoning, mozzarella cheese, garlic powder, onion powder, salt and pepper. Using small waffle maker, creates 2 chaffles.

Instructions
 

  • In mixing bowl, chop tomatoes and strawberries. Drizzle with olive oil, salt and pepper.
  • Add minced garlic, chopped red onion, sliced Kalamata olives, sliced basil leaves and balsamic vinegar. Toss to combine and set aside.
  • In bowl, add ricotta cheese and about half of the goat cheese. Using a fork or whisk, combine well until smooth.
  • To serve, take bread or prepared chaffle and spread with ricotta mixture. Top with a generous portion of bruschetta. Drizzle with additional balsamic and garnish with fresh basil and crumbled goat cheese/feta. Enjoy!
