Bacon, Blue Cheese, and Broccoli Omelet

Ingredients
  

  • 3 medium Eggs
  • 1 clove Garlic
  • 2 strips Bacon
  • 1 cup Broccoli Florets
  • 2 tbsp Chopped Onion
  • 2 tbsp Crumbled Blue Cheese
  • Dash of Italian Seasoning
  • Salt and Pepper to taste
  • 2 tbsp Heavy Whipping Cream (optional)

Instructions
 

  • Cut bacon into small pieces, about 1/4 inch wide. Add to warmed skillet and cook until about halfway done. Depending on the fat content of your bacon, drain about half if needed, but allow a few tsps to remain
  • Cut the broccoli florets down to smaller pieces and add them in to the skillet, coating well. Do the same for the chopped onions, and cook until both are fairly tender.
  • Add in the minced garlic and cook until fragrant. Season with Italian seasoning, salt and pepper.
  • In mixing bowl, beat eggs with heavy cream, if using, or a splash of water. Using a whisk, beat vigorously until bubbles form.
  • Turn skillet heat to low and add contents to the egg bowl. Beat until everything is incorporated and pour back into pan, placing lid on.
  • Allow to cook/steam until there is no liquid. Crumble about 2/3 of the blue cheese over the omelet and return lid for a few minutes to allow cheese to melt.
  • Remove lid and carefully flip omelet in half, sprinkling the remaining cheese on top. Slide onto the plate and enjoy!
