Bacon Wrapped Strawberries with Whipped Basil Ricotta

What to do with all of those strawberries? Wrap them in bacon, of course! This whipped ricotta is a perfect icing on the cake!

Servings 2 recipe makes 6 bites
- 6 large Strawberries
- 3 pieces Bacon
- 2 tbsp Ricotta Cheese
- 4 leaves Fresh Basil extra is always appreciated :-)
- 1 tbsp Sweetener I use Monkfruit
Clean and slice tops off of strawberries.
Slice bacon in half (shorter pieces), and wrap each strawberry with bacon, securing with a toothpick.
Place on either a baking sheet or in the air fryer, and cook until bacon is crisp. Remove and set aside to cool slightly, so they are touchable.
In mixing bowl, place ricotta cheese, sweetener, and finely chopped basil. Whip well (could use immersion blender here, but with quantity, I chose by hand).
If choosing to use, spoon ricotta mixture into plastic bag and snip the very corner tip. Squeeze into the top opening of the bacon swirls.
Remove toothpicks and serve with additional cheese on the side and fresh basil and strawberries for garnish. Enjoy!
