Cucumber and Radish Salad with Dill and Feta

A great, cool salad for those hot summer days! Tangy lemon and dill perfectly complement the cucumber and radish as a side or full meal!

- 8-12 large Shrimp
- 1 tbsp Olive Oil
- 1/4 tsp Garlic Powder
- 1/4 tsp Paprika
- Salt and Pepper
- 1 medium Cucumber
- 4 medium Radish
- 1/4 small Red Onion
- 1/3 cup Crumbled Feta
- 4 handfuls Mixed Greens
Dressing
- 2 sprigs Fresh Dill
- 1/2 squeezed Lemon
- 1 tbsp White Wine Vinegar
- 1 tbsp Mayonnaise
- Salt and Pepper
Heat oil in skillet. Add shrimp and season with paprika, garlic powder, salt and pepper. Flip to cook thoroughly. Remove and set aside.
In mixing bowl, combine dressing ingredients and mix well.
Thinly slice radishes, cucumbers and red onion, stirring into dressing.
Sprinkle in feta and stir gently to combine.
Serve cucumber salad over a bed of mixed greens. Top with shrimp and garnish with more dill or a wedge of lemon. Enjoy!
