Cucumber and Radish Salad with Dill and Feta

A great, cool salad for those hot summer days! Tangy lemon and dill perfectly complement the cucumber and radish as a side or full meal!

  • Skillet
  • Mixing bowl
  • Kitchen knife

Ingredients
  

  • 8-12 large Shrimp
  • 1 tbsp Olive Oil
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Paprika
  • Salt and Pepper
  • 1 medium Cucumber
  • 4 medium Radish
  • 1/4 small Red Onion
  • 1/3 cup Crumbled Feta
  • 4 handfuls Mixed Greens

Dressing

  • 2 sprigs Fresh Dill
  • 1/2 squeezed Lemon
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Mayonnaise
  • Salt and Pepper

Instructions
 

  • Heat oil in skillet. Add shrimp and season with paprika, garlic powder, salt and pepper. Flip to cook thoroughly. Remove and set aside.
  • In mixing bowl, combine dressing ingredients and mix well.
  • Thinly slice radishes, cucumbers and red onion, stirring into dressing.
  • Sprinkle in feta and stir gently to combine.
  • Serve cucumber salad over a bed of mixed greens. Top with shrimp and garnish with more dill or a wedge of lemon. Enjoy!
