Cucumber Apple Mint Smoothie
This light and refreshing beverage is great for a hot afternoon treat or an accompaniment for your brunch guests. Great to be made ahead!

- 1 tbsp Yogurt
- 1/2 squeezed Lemon
- 1 bunch Mint (about 4 hearty stalks)
- 1 large Cucumber
- 1/2 medium Apple
This super simple snack takes almost no effort! Slice the lemon and squeeze, combining with yogurt, mint and apple, cut into pieces. Place all in a blender and add larger pieces of cucumber, peeling first. Blend until smooth and garnish with more mint leaves! This is great if made ahead and chilled prior to serving.
