Curry and Avocado Deviled Tomatoes

Ingredients
  

  • 6 small Tomatoes
  • 1/2 large Avocado
  • 1/4 medium Red Onion
  • stalk Celery
  • 2 tbsp Mayo could use vegan
  • 1/4 tsp Curry Powder
  • 1/4 tsp Chili Powder
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Dried Mustard
  • Salt and Pepper
  • 1 handful Mixed Greens (optional for serving)

Instructions
 

  • Slice tomatoes in half and hollow out the center, creating bowls.
  • Chop the insides of the tomato and place in a mixing bowl.
  • To the mixing bowl, add finely chopped celery and red onions, as well as avocado and mayo. Mash together.
  • Seasoning with all dried ingredients and stir, adjusting to preference.
  • On serving platter place mixed greens and tomatoes, filling with mixture. Sprinkle with additional chili powder for garnish. Enjoy!
