Jalapeno Peach Salsa with Chipotle Shrimp

- 10-12 medium Shrimp, deveined
- 2 tsp Chipotle Powder I used smoked chipotle
- 1/2 medium Lime
- 1 medium Jalapeno
- 1/4 cup Red Onion
- 1 clove Garlic
- 1 bunch Basil (about 6 leaves)
- 1/2 cup Fresh Tomato
- 1 tender Peach
- 1 tbsp Olive Oil
- Salt and Pepper to taste
In mixing bowl, combine chopped tomato, onion, garlic, jalapeno, olive oil, salt and pepper and mix well. Let sit for a few minutes to combine flavors.
In skillet, heat a bit of oil and place your shrimp, sprinkling with chipotle pepper. As they sear halfway, flip and repeat.
While the shrimp are cooking, add the sliced peach to your salsa mixture, along with some sliced basil leaves, saving a few for garnish. Mix well and top with squeezed lime.
Plate shrimp with a topping of the fresh salsa and a little more basil for garnish and enjoy!
