Kohlrabi Salsa Verde

Quick, easy and delicious! This salsa brings a great crunch from the kohlrabi, and fresh kick from the peppers and cilantro! A perfect treat!

- 1 large Kohlrabi about 1 cup diced
- 1/2 large Green Pepper
- 1 small White Onion
- 1 small Jalapeno (adjust to spice preference)
- 1/2 large Cucumber
- 1/2 squeezed Lemon
- 2 tbsp Olive Oil
- 2 bunches Cilantro
- 2 cloves Garlic
- Salt and Pepper
Slice off leaves and ends of kohlrabi and peel. Carefully dice into small pieces and add to mixing bowl.
To the kohlrabi in similar sizes, add diced cucumber, green pepper, and onion.
In smaller pieces, add garlic, jalapeno, and fresh cilantro.
Squeeze lemon and add olive oil, salt and pepper. Stir well to combine. Serve with veggie slices or your favorite chips. Enjoy!Variation-for a more salsa flavor, try adding a bit of cumin and chili powder! Also great served over fish or grilled meats!
