Lemon Thyme Green Beans with Toasted Almonds

- 2 tsp Olive Oil
- 1/2 squeezed Lemon
- 1 clove Garlic
- 2 sprigs Thyme
- 1/2 tsp Dijon Mustard
- 1/3 cup Slivered Almonds
- 3 handfuls Fresh Green Beans
- Salt and Pepper
- 1/3 cup Shaved Parmesan Cheese Try for an aged variety if possible
In skillet, toast almonds until browned. Set aside to cool.
Clean and trim green beans and cut in half or thirds, depending on size, to create bite size pieces.
In warm skillet, add green beans with a small amount of water. Cover to steam. *This technique will preserve more crisp and flavor than submerging the beans in water. In mixing bowl, combine olive oil, lemon juice, mustard, thyme, garlic, salt and pepper and mix well. Add about 1/3 of the parmesan cheese, sliced thin, to give flavor. Stir well.
When beans are easily inserted with a fork but not mushy, remove lid and allow any remaining water to cook off. Turn off heat and give a few minutes to cool slightly.
Add to mixing bowl and toss in liquids. Chill until ready to serve.
Toss in remaining shaved parmesan and toasted almonds when ready to serve. Enjoy!
