Pea Shoot Breakfast Stir Fry

Wake up to a beautiful sunny breakfast full of flavor!! The pea shoots add a nice addition to a simple stir fry that comes together quickly, for a delicious weekend breakfast.

- 1 1/2 tbsp Olive Oil
- 1 tsp Soy Sauce
- 1 tsp Fresh Ginger
- 1 clove Garlic
- 4 fresh Eggs
- 1/2 sliced Orange or Red Pepper
- 1 medium Bunch Pea Shoots (about 2 inches diameter)
- 1 large Handful Snap Peas
In warmed skillet, add olive oil, sliced peppers and snap peas. Toss lightly until they start to get tender.
Add garlic, ginger, soy, and pea shoots, and sauté together until the shoots are nicely wilted.
Divide and serve with fried eggs on top. Enjoy!
