Pea Shoot Breakfast Stir Fry

Wake up to a beautiful sunny breakfast full of flavor!! The pea shoots add a nice addition to a simple stir fry that comes together quickly, for a delicious weekend breakfast.

  • Skillet
  • Kitchen knife

Ingredients
  

  • 1 1/2 tbsp Olive Oil
  • 1 tsp Soy Sauce
  • 1 tsp Fresh Ginger
  • 1 clove Garlic
  • 4 fresh Eggs
  • 1/2 sliced Orange or Red Pepper
  • 1 medium Bunch Pea Shoots (about 2 inches diameter)
  • 1 large Handful Snap Peas

Instructions
 

  • In warmed skillet, add olive oil, sliced peppers and snap peas. Toss lightly until they start to get tender.
  • Add garlic, ginger, soy, and pea shoots, and sauté together until the shoots are nicely wilted.
  • Divide and serve with fried eggs on top. Enjoy!
