Instructions
In mixing bowl, add olive oil, lemon, sweeter and goat cheese and whisk until creamy (use room temperature goat cheese).
Slice fresh peach and mix with fresh mint. Drizzle with creamy goat cheese sauce and toss with pecans. Enjoy!
