Roasted Broccolini with Garlic Bleu Cheese Butter

So easy, yet so transforming! The strong flavors in this simple sauce steal the show over any vegetable! A great side dish for any entrée!

- 3 handfuls Broccoli or Broccolini about 4 cups
- 2 tsp Olive Oil
- Salt and Pepper
Sauce
- 1 clove Garlic
- 3 tbsp Butter
- 1/2 squeezed Lemon
- 2 tsp Olive Oil
- 3 tbsp Bleu Cheese Crumbles
- Salt and Pepper
In oven (or air fryer), lay broccolini and drizzle with olive oil, salt and pepper. Shake to coat well and roast until outsides are crispy and stalk is easily inserted with a fork.
While roasting, in a bowl, heat butter.
Into hot butter, add minced garlic, olive oil, lemon, olive oil and blue cheese.
Using fork, mash bleu cheese until it's a smooth paste (use whisk if making large quantities).
Adjust lemon and olive oil for a thinner sauce.
When broccoli is cooked, make sure the sauce is hot and stir well for a sauce consistency. Drizzle over broccoli. Enjoy!
