Roasted Salmon Sushi Bowl with Cauliflower Rice and Spicy Mayo

Refreshing, healthy, and amazingly easy to put together! This bowl is a perfect answer to your sushi craving without all of the rice!

- 1 cup Cauliflower Rice
- 1 tbsp Soy Sauce or Liquid Aminos
- 1 tsp Grated Ginger
- 1/2 medium Cucumber
- 4 medium Radishes
- 1 large Avocado
- 2 medium Carrots
- 2 handfuls Spinach
- 2 handfuls Shredded Cabbage
- 4 oz Roasted Salmon (could use smoked, lox, or other)
- 2 sheets Dried Seaweed Snack
- 2 tbsp Mayonnaise
- 1 tsp Chili Garlic Sauce (or hot sauce of choice)
- 1/4 medium Lemon
- 1 tsp Sesame Seeds
- 2 stalks Scallions
In mixing bowl, combine mayo, hot sauce, and squeezed lemon and mix well. Set aside.
In skillet, cook the cauliflower rice per instruction. When almost done cooking, add soy sauce/aminos, and grated ginger. Stir well and turn off heat. Set aside and allow to cool.
In your dishes, plate spinach and cabbage. Layering on top matchstick cut carrots, cucumber, radishes, slices of avocado, and crumbled salmon.
Spoon on the cauliflower rice.
Drizzle with spicy mayo dressing, and garnish with strips of seaweed snack, sliced scallions and sesame seeds. Enjoy!
