Salmon with a Strawberry Balsamic Chutney

A delicious way of using those berries in a light way! The sweetness of the berries are perfectly complemented with the red onion and feta cheese for a great lunch hot or cold!

Ingredients
  

  • 1/4 cup Balsamic Vinegar
  • 1 cup Strawberries
  • 2 pieces Salmon
  • 1/4 sliced Red Onion
  • 1/4 cup Crumbled Feta Cheese
  • 2 handfuls Mixed Greens

Instructions
 

  • In saucepan, add half of the strawberries and the balsamic vinegar, cooking until berries are softened.
  • In skillet, pan fry the salmon fillets.
  • Serve salmon with the balsamic strawberries atop, with feta and sliced red onions. I served this over a bed of greens, but this would also be great with rice or steamed vegetables.
