Salmon with a Strawberry Balsamic Chutney
A delicious way of using those berries in a light way! The sweetness of the berries are perfectly complemented with the red onion and feta cheese for a great lunch hot or cold!

- 1/4 cup Balsamic Vinegar
- 1 cup Strawberries
- 2 pieces Salmon
- 1/4 sliced Red Onion
- 1/4 cup Crumbled Feta Cheese
- 2 handfuls Mixed Greens
In saucepan, add half of the strawberries and the balsamic vinegar, cooking until berries are softened.
In skillet, pan fry the salmon fillets.
Serve salmon with the balsamic strawberries atop, with feta and sliced red onions. I served this over a bed of greens, but this would also be great with rice or steamed vegetables.
