Take that delicious summer vegetable to the next level with this creamy avocado sauce! The rich avocado and punch of feta elevate any vegetable into a delicious dish that's anything but ordinary.
Slice zucchini into large, diagonal slices about 1/4 inch thick. In a warm skillet, add a little oil and pan fry until there is a light sear on all sides.
While zucchini is cooking, using either a bowl and blender, or in a food processor, combine garlic, cream, cream cheese, feta, and avocado and blend until smooth. Alter heavy cream as needed for a smooth consistency. Salt and pepper to taste.
Remove zucchini from skillet and ladle sauce liberally over slices. Crumble additional feta on top for garnish. Enjoy!
