Sauteed Zucchini with Avocado Feta Cream Sauce

Equipment

  • Immersen Blender or food processor
  • Skillet
  • Kitchen knife
  • Mixing bowl

Ingredients
  

  • 1-2 medium Zucchini
  • 2 tbsp Olive Oil
  • 1/4 cup Heavy Whipping Cream
  • 1 oz Cream Cheese
  • 2 tbsp Feta Cheese
  • 1 whole Avocado
  • 1 clove Garlic
  • Salt and Pepper to taste

Instructions
 

  • Slice zucchini into large, diagonal slices about 1/4 inch thick. In a warm skillet, add a little oil and pan fry until there is a light sear on all sides.
  • While zucchini is cooking, using either a bowl and blender, or in a food processor, combine garlic, cream, cream cheese, feta, and avocado and blend until smooth. Alter heavy cream as needed for a smooth consistency. Salt and pepper to taste.
  • Remove zucchini from skillet and ladle sauce liberally over slices. Crumble additional feta on top for garnish. Enjoy!
