Using spiralizer, create zucchini noodles. Set aside.
In large mixing bowl, combine lemon juice, olive oil, capers with liquid, sliced olives with liquid, garlic, parsley, salt and pepper. Mix well to combine.
Taking smoked salmon (or cooked and cooled salmon), break into pieces and add in, along with most of the feta cheese. Toss to incorporate.
Add zucchini noodles and mix. Allow to sit for a few minutes to absorb flavors before serving.
Plate with additional crumbled feta cheese and lemon or parsley garnish. Enjoy!
