Pea Shoot Breakfast Stir Fry
Good morning!! This breakfast just needs a warm cup of java, a bathrobe, and a great book to make the recipe complete. All of the flavors of a farm fresh breakfast with an Asian twist!
Coloring outside the lines. Who said breakfast had to be eaten in the morning?! And further, dinner eaten at night? I’m a big fan of stir fry, and I will eat it any time of the day that calls me! This recipe was inspired by the shoots, and wanting to use them as a great base for a fun breakfast. The typical thoughts of butter and breakfast meats came to mind and were quickly pushed away. These shoots needed the umami of their stir fried friends, and the crunchy combo came together perfectly! The soy sauce was a must in this dish, although only a small amount to allow the vegetable flavors to run the show.
A time to be selective. Eggs. There are many types of eggs you can find, and the labeling can be confusing. I find when making a recipe that calls for an ‘egg’ as a binding element, such as many baking goods, meatballs, egg wash for breading, etc, the flavor of the egg is pretty low priority as much as the texture, and for this, if you used a lower quality egg, it would not affect the end result of the dish very much. I do find though, that when the egg is brought to the forefront, or in this case especially, paired with a bold flavored partner, the egg should be able to hold its own flavor, and for this reason, I find there just is no better option that a really good quality, farm fresh egg. That yolk is the icing on the cake for a perfect morning breakfast!

Pea Shoot Breakfast Stir Fry
Equipment
- Skillet
- Kitchen knife
Ingredients
- 1 1/2 tbsp Olive Oil
- 1 tsp Soy Sauce
- 1 tsp Fresh Ginger
- 1 clove Garlic
- 4 fresh Eggs
- 1/2 sliced Orange or Red Pepper
- 1 medium Bunch Pea Shoots (about 2 inches diameter)
- 1 large Handful Snap Peas
Instructions
- In warmed skillet, add olive oil, sliced peppers and snap peas. Toss lightly until they start to get tender.
- Add garlic, ginger, soy, and pea shoots, and sauté together until the shoots are nicely wilted.
- Divide and serve with fried eggs on top. Enjoy!
