Salmon with a Sun-Dried Tomato Garlic Cream Sauce
A fabulous take on the classic duo! This sauce combines the rich cheese taste with the bold flavor of the sun-dried tomato, making the perfect solution for a quick weeknight meal that feels anything but that!
Move over Vampires! This is a fun time in writing when I can embrace my name as the Goddess of Garlic. While the recipe calls for 2 cloves….think of this as more of a loose suggestion! I find when making a decadent sauce like this, airing on the generous side is always a benefit. Not only does the sauce fit perfectly in this dish, it is wonderful heated up over other vegetables as well (or other meat, or in a bowl with a spoon, or just a straw in the pan….you get the idea). The richness of the cream cheese is a perfect base to hold a lot of garlic flavor, so depending on your audacity (or date night status :-)), I would suggest not holding back. Well worth the breath after for this sauce! If not for the flavor, consider it an ode to your health to load up on those cloves!
Embracing those fats. It wasn’t until starting this blog that I realized how much salmon I actually eat as my protein. Over the years, I’ve found I gravitate to protein rich foods with healthy fats, and although many would make a compelling argument for red meat, I feel a good piece of salmon is pretty high up there in health benefits to make for a quick to prepare or thaw, quick cooking time, and delicious flavor kind of meal. Especially on nights when you have nothing in mind to cook, having a few pieces of salmon on hand in the freezer is a great way to make a gorgeous and healthy meal in very little time. There are many varieties of salmon, but as fancy as they can be, I still keep a staple of wild caught frozen salmon in my freezer at all times (no matter what variety, it’s important to note how it is sourced). A great source of Omega 3 fatty acids and protein, salmon is a wonderful option for any meal, whether you are looking for the health benefits or taste alone!

Salmon with a Sun-Dried Tomato Garlic Cream Sauce
Equipment
- Kitchen knife
- 2 Skillets
Ingredients
- 2 ounces Cream Cheese
- 1/3 cup Heavy Whipping Cream
- 2 cloves Garlic
- 1/4 cup Parmesan Cheese
- 2 tbsp Olive Oil
- 1/4 cup Sun-Dried Tomatoes
- 2 pieces Salmon
- 1 large Bunch of Asparagus (about 10 stalks)
Instructions
- In a warmed skillet, heat oil, and add crushed garlic and sundried tomatoes, cooking just until slightly fragrant but not browned.
- Add in heavy cream and warm. Slowly add in cream cheese in small portions, combining until smooth.
- Combine the parmesan cheese and turn heat low.
- In a separate skillet, warm oil and sear salmon, adding asparagus around fillets to also cook.
- Variations: to plate, serve salmon with asparagus, adding sauce to top, or, transfer salmon to sauce pan, covering the fillets with sauce. Place lid on and let simmer for a few minutes before serving. This will provide a more creamy dish overall.
