Sauteed Zucchini with Avocado Feta Cream Sauce
Add a little pizazz to your summertime cooking with this delicious, creamy sauce sure to be a crowd pleaser! The rich avocado pairs perfectly with the feta cheese that is not only a great addition to those veggies, but makes a nice sauce for those grilled meats as well! Keep it balanced. Especially in the summer, with an abundance of farmers market finds and fresh garden produce, I find myself guilty of existing on veggies alone. While that may be healthy in some regards, as a balanced diet, this leaves room for improvement from a nutritional standpoint, especially when it comes to protein. The motivation behind this recipe stemmed from just that. I wanted to find a way to embrace the zucchini in all of its glory, but make it a more substantial dish, whether it be a side or main course. Having the cheese and avocado in this sauce provides the benefits of a fairly hearty sauce with more nutritional value, while still maintaining a very fresh and light flavor profile, making this ideal for any vegetable forward dish!
Size does matter :-). Get your mind out of the gutter…zucchini can actually be very different in flavor depending on the size of the vegetable you choose. While very large zucchini can be nice for cooking because of the surface area of the slices, they are often watery, seedy and less flavorful. I prefer to use these when looking for a supporting element, such as a zucchini boat or zoodle, where the flavor of the vegetable is less of a priority. The smaller zucchini are the most flavorful, but also not as much to cook with, so best if doing a simple sauté on the side, where the highlight is the veggie itself. The in between size is your most versatile, so depending on what you are cooking, it is nice to find zucchini that are about 2-3 in diameter. Using a flavorful sauce such as this one, helps to bring flavor in if you are using a larger variety. Good to think ahead when you are choosing your produce!

Sauteed Zucchini with Avocado Feta Cream Sauce
Equipment
- Immersen Blender or food processor
- Skillet
- Kitchen knife
- Mixing bowl
Ingredients
- 1-2 medium Zucchini
- 2 tbsp Olive Oil
- 1/4 cup Heavy Whipping Cream
- 1 oz Cream Cheese
- 2 tbsp Feta Cheese
- 1 whole Avocado
- 1 clove Garlic
- Salt and Pepper to taste
Instructions
- Slice zucchini into large, diagonal slices about 1/4 inch thick. In a warm skillet, add a little oil and pan fry until there is a light sear on all sides.
- While zucchini is cooking, using either a bowl and blender, or in a food processor, combine garlic, cream, cream cheese, feta, and avocado and blend until smooth. Alter heavy cream as needed for a smooth consistency. Salt and pepper to taste.
- Remove zucchini from skillet and ladle sauce liberally over slices. Crumble additional feta on top for garnish. Enjoy!
