Stuffed Hungarian Hot Peppers
A fantastic way to use those seasonal peppers without having too much heat! The cheese in these peppers perfectly tempers the spice level, making these a great crowd pleaser!
Feelin’ hot hot hot! These peppers were new to me to cook with, so I was a little uncertain of creating recipes incorporating them. As my tester, I chopped one up in my salad for lunch-verdict, yes, they are hot 🙂 So to try them as a dish for others, I wanted to use some dairy to cut the heat a bit, but still enjoy the hot flavor. The cheeses in this recipe are a great way to balance out the spice, and if you prefer a bit more, just leave more of the seeds in! Also, the filling here is a bit more neutral in flavor, so the peppers really come through in a delicious fashion!
Sky’s the limit! When discovering a new ingredient, I often like to start with a fairly versatile dish to see the flavors, and then play around from there. With these peppers, depending on what you’ve purchased, they came in may colors and sizes. If space allows, it would be fun to explore adding a protein to the filling, such as a shredded chicken or chopped shrimp, to make this more of a meal. Another variation I would try would be to tenderize a steak or chicken breast until very thin and roll these inside, for a nice stuffed in stuffed main course option! Stuffed Hungarian Hot Peppers
Equipment
- Kitchen knife
- Mixing bowl
- Baking Dish
Ingredients
- 6-8 medium Hungarian Hot Peppers
- 1/2 cup Ricotta Cheese
- 1/4 cup Shredded Parmesan Cheese
- 1 medium Egg
- 1 tsp Olive oil
- 2 cloves Garlic
- 1 bunch Fresh Parsley
- Salt
Instructions
- Preheat oven to 350. Taking peppers, slice one layer lengthwise to open. Using a spoon, scrape out the seeds.
- In mixing bowl, combine cheeses, egg, olive oil, garlic, salt, and most of the chopped parsley, reserving some for garnish. Mix ingredients well.
- Using a spoon, stuff ingredients into peppers, place in a baking pan and bake until cheese is bubbly and starting to brown on the top.
- Remove and sprinkling with additional parsley for garnish. Serve and enjoy!Variation-if your peppers are large enough to allow and wanting to make a heartier dish, a little shredded chicken could be a nice addition. Or simply an accompaniment.
