Meat Lover’s Pizza on a Chicken Crust
Don’t miss out on another pizza night because you are limiting your carbs! This is a great answer, and tastes so good, you may be sharing with more people than you think!
All about that base. There are many versions of a low-carb pizza crust, from cauliflower to zucchini and everything in between. Some are better than others, of course, but I have found one thing consistent across the board-it comes down to texture. Bread, naturally, is more of a dry substance, which absorbs sauce and cheese, and creates a great…crust, literally. When substituting a vegetable or meat, you are now adding more liquid. For this to be successful, it’s important to squeeze or dry out as much as possible before assembling your crust, to create that skin that can hold the toppings.
Season with caution! A learning lesson for me on this dish came down to salt. Canned chicken has salt, pepperoni has salt, and Lord knows ham has salt! Combined on one piece of pizza, this could easily run away from you! I’d caution to not add additional salt until trying your end result, and if the ham you are using tastes a bit more salty, have a heavy pour on the sauce to balance this out. Power packing the protein here is great, but countering with some veggies and sauce will go a long way towards the overall flavor if you are sodium sensitive!

Meat Lover’s Pizza on a Chicken Crust
Equipment
- Baking sheet
- Mixing bowl
- Kitchen knife
- Parchment Paper (optional)
Ingredients
- 1/2 cup Shredded Parmesan Cheese
- 1 can Chicken Could use ground, but be careful of moisture.
- 1 medium Egg
- 1 tsp Oregano
- 1/2 tsp Crushed Red Pepper Flakes
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- Pepper to taste
- 1/2 cup Pizza Sauce Sugar free if Keto
- 10-12 slices Pepperoni
- 3/4 cup Cubed Ham
- 1/4 sliced Red Onion
- 1 cup Shredded Mozzarella Cheese
- Green Pepper, Mushroom, Black Olives, Onion (optional additional ingredients)
Instructions
- Turn oven to 350. Empty drained canned chicken onto the baking sheet and place in oven for about 10 minutes to dry out most of the moisture.
- Remove and put chicken in mixing bowl, along with egg, parmesan, and seasonings. Mix well.
- Spread mixture onto baking sheet (lay parchment paper underneath if using). Press to create a thin crust.
- Increase oven to 425 and place pizza crust back in for about 10 minutes to form.
- Remove and spread with sauce, cheese, meats and onion, with any additional toppings, and return to oven for about 15 minutes, checking often.
- Remove, slice, and enjoy!
