Whether you are looking for an easy appetizer for your next meal, or meal itself, this take on a favorite comes together quickly and effortlessly!

The raw deal. Everyone has their own comfort level with raw foods, especially when it comes to meats. Growing up in the Midwest, fish has often been a controversial topic, given the geographical location and access to fresh water. Not there aren’t great places to get fresh fish, I’m just less likely to buy this from the back of a truck lining the street 🙂 Whatever your choice may be, ceviche is a great way to enjoy some good seafood! Traditionally, by squeezing the lemon and lime in a bowl, the fish would cure in the juice, essentially ‘cooking’ it. I opted for a nice, cooked tray of shrimp from the local deli! For the sake of saving some adventurous dignity, I will say this is research for a time saving technique!

Spice it up baby! Classic ceviche has a few flaws, in my humble opinion. Since it is a slowly cured fish, the juices are the star of the show with their citrus seasonings. A small hint of jalapeno brings the dish to life. Maybe I just like bold food, but any appetizer like this that doesn’t call for garlic is a sin in my book! I definitely recommend throwing a clove in there and double down on that jalapeno! Having a creamy avocado is a great balance for a bit of spice-perfect as a dip, spread over a taco or salad, or get wild and make a funky pasta or bean salad!

Simple Shrimp Ceviche

No need to chance raw fish with this cooked shrimp recipe! All of the delicious citrus and cilantro flavors make this a great addition to any meal!

Equipment

  • Mixing bowl
  • Kitchen knife

Ingredients
  

  • 1 small Lemon
  • 1 small Lime
  • 1 clove Garlic
  • 1/2 small Jalapeno adjust amount to spice preference
  • 2 bunches Fresh Cilantro
  • 12-15 medium Cooked Shrimp
  • 1/2 medium Cucumber
  • 1 medium Avocado
  • 1 cup Cubed Tomatoes opt for an heirloom variety if possible!
  • 1/4 medium Red Onion
  • Salt and Pepper

Instructions
 

  • In mixing bowl, squeeze lemon and lime. Add minced garlic, chopped red onion and jalapeno chopped in small pieces. Sprinkle with salt and pepper and mix.
  • Cleaning and removing tails, cut shrimp in small pieces. I prefer to make all veggies and shrimp a bit smaller so they can be eaten uniformly, but personal preference. Stir to combine.
  • Add chopped cucumber, tomato, and most of the chopped cilantro. Stir and refrigerate until ready to serve.
  • To serve, chop avocado and gently stir in. Garnish with more chopped cilantro. Enjoy!
