Bacon, Blue Cheese, and Broccoli Omelet
Hearty, healthy and oh so delicious! This omelet is packed with nutrients and protein and would be a great start to the day or a delicious option as a breakfast for dinner night!
Order of operations! I make omelets often and in many forms and I have differing views on methodology depending on the ingredients I use. Typically, I like to leave the ingredients in the skillet, turn down the heat, and pour the whipped eggs over them, to preserve as much of the ‘whip’ as possible before adding the lid, which creates a fluffier omelet. In this scenario, broccoli is our problem child. I have found when using this method, the broccoli is sitting directly on the pan and can create a browning effect as the omelet cooks. For that reason, I would suggest adding the ingredients into the egg mixture prior to pouring back into the pan, to create a little egg barrier. This will keep the ingredients cooking in a more uniform fashion and eliminate burning!
Choosing your oils wisely. Oil for cooking is great. ‘Grease’ for cooking is not! Knowing your smoke point and correct amounts of oils to use is a key to any dish, but especially eggs, which are very absorbent. Because bacon naturally will produce its own fat, instead of fighting this by draining and adding your own oil, I’d suggest using the flavor the bacon provides as your cooking element. If you are using a fattier cut of meat, I would drain some out to leave the ‘normal’ amount (a tsp or two) of cooking oil in the pan, and use that when you continue with the other ingredients. Not only does this make the process easier, but it gives the whole omelet a great flavor throughout!

Bacon, Blue Cheese, and Broccoli Omelet
Equipment
- Kitchen knife
- Skillet with lid
- Mixing bowl
- Whisk
Ingredients
- 3 medium Eggs
- 1 clove Garlic
- 2 strips Bacon
- 1 cup Broccoli Florets
- 2 tbsp Chopped Onion
- 2 tbsp Crumbled Blue Cheese
- Dash of Italian Seasoning
- Salt and Pepper to taste
- 2 tbsp Heavy Whipping Cream (optional)
Instructions
- Cut bacon into small pieces, about 1/4 inch wide. Add to warmed skillet and cook until about halfway done. Depending on the fat content of your bacon, drain about half if needed, but allow a few tsps to remain
- Cut the broccoli florets down to smaller pieces and add them in to the skillet, coating well. Do the same for the chopped onions, and cook until both are fairly tender.
- Add in the minced garlic and cook until fragrant. Season with Italian seasoning, salt and pepper.
- In mixing bowl, beat eggs with heavy cream, if using, or a splash of water. Using a whisk, beat vigorously until bubbles form.
- Turn skillet heat to low and add contents to the egg bowl. Beat until everything is incorporated and pour back into pan, placing lid on.
- Allow to cook/steam until there is no liquid. Crumble about 2/3 of the blue cheese over the omelet and return lid for a few minutes to allow cheese to melt.
- Remove lid and carefully flip omelet in half, sprinkling the remaining cheese on top. Slide onto the plate and enjoy!
