Bacon Wrapped Strawberries with Whipped Basil Ricotta
What to do with all of those strawberries? Wrap them in bacon, of course! This whipped ricotta is a perfect icing on the cake!
My kind of sweets! If you have been following my recipes for a while, you’ve likely caught on to my lack of sweet tooth. But, give me a great salty and sweet combo, and I’m your girl!! I picked up strawberries last weekend and was trying to think outside the box of uses, and my train of thought went a little something like this: fresh fruit-breakfast-strawberry jam-bacon-everything wrapped in bacon-why not?! If you are a true dessert lover, you could easily swap out the ricotta here for cream cheese, but I like that it had a creamy yet neutral flavor, and brought everything together without too much of either salt or sugar. Absolutely delicious!!! (and yes, that leftover cheese on raw strawberries is a must).
Whip it, whip it real good! Ricotta-to whip or not to whip? It really does matter! The first time I saw this technique in a recipe, I gave a bit of a pretentious eye roll…ok fine, I’ll whip this cheese and it will taste exactly the same. While the profile is similar, by whipping the ricotta, you transform a somewhat grainy cheese into a velvety consistency, which really brings out the decadent nature of these bites. Worth the added step!

Bacon Wrapped Strawberries with Whipped Basil Ricotta
Equipment
- Mixing bowl
- Whisk could use blender/immersion blender
- Air Fryer or oven
- Toothpicks
- Kitchen knife
- Plastic sandwich bag (optional for piping)
Ingredients
- 6 large Strawberries
- 3 pieces Bacon
- 2 tbsp Ricotta Cheese
- 4 leaves Fresh Basil extra is always appreciated 🙂
- 1 tbsp Sweetener I use Monkfruit
Instructions
- Clean and slice tops off of strawberries.
- Slice bacon in half (shorter pieces), and wrap each strawberry with bacon, securing with a toothpick.
- Place on either a baking sheet or in the air fryer, and cook until bacon is crisp. Remove and set aside to cool slightly, so they are touchable.
- In mixing bowl, place ricotta cheese, sweetener, and finely chopped basil. Whip well (could use immersion blender here, but with quantity, I chose by hand).
- If choosing to use, spoon ricotta mixture into plastic bag and snip the very corner tip. Squeeze into the top opening of the bacon swirls.
- Remove toothpicks and serve with additional cheese on the side and fresh basil and strawberries for garnish. Enjoy!
