Blueberry Jalapeno Relish over Brie

Blueberry Jalapeno Relish over Brie

A dish to impress without any of the labor needed! This relish comes together in minutes and is a beautifully delicious addition to a variety of dishes!

The artist’s palette of the kitchen. I’ve had many people ask about the science behind cooking (think salt, fat, acid, heat test), and it wasn’t until making this relish that it occurred to me-I’m painting with food! When thinking back to grade school art class, many of us learned the color wheel, with our primary, secondary and tertiary colors used to mix new colors or create great compositions. Often, it’s advised to use a color across the wheel, pulling it’s opposite to best complement each other. I’ve never claimed to know the science behind cooking, but when I’m making a new dish, I try to pull opposite flavors together to create a new and complex flavor. This relish pulls the sweet of the blueberries against the spicy of the jalapeno, all while being tamed by the creaminess of the brie cheese. A true combination that would make Monet proud!

The glue that holds it all together. Every dish has a great supporting character, and in this relish, the apple steps up to fill the role. While by itself, an apple has a lot of flavor, here, with its spongy texture, it absorbs the surrounding flavors and acts as the binding element to hold everything together in a cohesive fashion. Making this a little ahead of time only helps the flavors marinate together more, so great for those dinner parties you’re hosting or bringing a dish elsewhere-keep it easy! While I made this as an appetizer, the neutrality would allow for a delicious addition over a seared salmon, chicken, or a fun dessert!

Equipment

  • Food Processor
  • Kitchen knife
  • Mixing bowl

Ingredients

  • 1/2 squeezed Fresh Lemon
  • 1 cup Blueberries
  • 1/2 medium Red Apple
  • 1/2 medium Jalapeno
  • 5-6 leaves Basil
  • 4-6 oz Brie I used half of the 8 oz wheel

Instructions

  • In the food processor, add about 2/3 of the blueberries, chopped jalapeno, chopped apple and lemon juice. Puree until quite small pieces.
  • Add in most of your basil leaves and pulse, so there are fine ribbons of basil throughout the relish.
  • Transfer the relish to a mixing bowl and add in the remainder of the blueberries that have been set aside.
  • To serve, spoon atop your wedge of brie and garnish with remaining basil.
Great served with crackers, sliced cucumbers, or any other dipping of your choice! This relish would also be great with an entree on a savory meat or fish.
