Creamy Scrambled Eggs with Goat Cheese and Thyme

A great way to jazz up an easy go-to favorite! Using goat cheese while cooking gives a rich and creamy texture to the eggs without weighing them down!

The incredible edible. I’m going to dance the topic of egg prices right now (political reference for future readers-look up this date in time). I am, and always have been, a huge advocate for farm fresh eggs, especially when eating eggs as the main ingredient. When cooking in other recipes, often you can squeeze by unnoticed with a weak little white egg from the store, but when making this the front and center of the meal, using the most quality you have access to is your best bet. You likely wouldn’t invite friends over for a steak dinner and serve them a hotdog, so don’t short change yourself on eggs! It use to be that these came at a large premium in cost, but since I’ve been buying fresh eggs, these prices have stayed fairly constant while the store eggs fluctuate often, making these much more affordable and available than ever before-in many cases, cheaper. You really will taste the difference in quality!

Breakfast salad…? I get heat for this one a lot. The first time I brought a breakfast salad to a holiday meal, my friends and family looked at me like I had shown up in costume. Who does this sacrilegious thing?! Hear me out. Many times breakfast takes on a soft texture and fairly neutral profile (see my other breakfast ideas to shake this stereotype!). But, if dining with other culinary connoisseurs, often a fresh element is welcomed, if not already available. If dressed correctly, the bite of texture and freshness from greens can be a great contrast to your fluffy eggs! Here I used a citrus olive oil to drizzle over a bed of watercress, adding a zing that worked well against the creamy goat cheese!

Creamy Scrambled Eggs with Goat Cheese and Thyme

An easy way to take your scrambled eggs to the next level! The goat cheese creates a wonderfully silky texture that transforms these eggs into a fluffy and decadent breakfast!

Equipment

  • Mixing bowl
  • Skillet
  • Whisk
  • Spatula

Ingredients
  

  • 4-6 large Eggs good quality eggs help a lot here!
  • 2 tbsp Water
  • 1 tbsp Butter
  • 3 tbsp Goat Cheese
  • 1 sprig Fresh Thyme
  • Salt and Pepper

Instructions
 

  • In a mixing bowl, crack eggs and add water. Using whisk, beat well until bubbles are forming.
  • Warm skillet to medium low and add butter. You want this to melt but not brown. Pour in egg mixture.
  • Using a spatula, slowly stir constantly until the egg starts to form. Add in about 2/3 of the goat cheese and about 2/3 of the thyme.
  • Sprinkle with salt and pepper and continue to stir slowly, allowing the eggs to mix well with the cheese and form soft peeks.
  • When the eggs are cooked thoroughly, plate and serve with more crumbled goat cheese and thyme as a garnish. Enjoy!
    This is great served with fresh fruit, toast, or a breakfast meat to complete the meal! Shown here-I serve a breakfast salad of watercress greens with a citrus olive oil drizzled on top. The zing of citrus was a great complement to the rich eggs.
