Greek Cucumber Noodle Salad

Dress up that fun summertime favorite with a creative new spin! Not only do these cucumber noodles add a fun look the dish, this technique incorporates that delicious dressing more evenly for a better flavor each bite!

The secret’s in the sauce! I can’t tell you how many times I’ve chopped up cucumbers and tomatoes for a nice Greek side salad or dish to pass with friends and find myself constantly walking over to give it another stir. Or at the end of the meal, being disheartened to see a little pool of that wonderful dressing you put together. What I found with using cucumber noodles that was a fantastic side benefit to simply aesthetic was that the entire salad seemed to hold more flavor and the dressing was absorbed by the cucumber! It helps to add the noodles to the dressing mixture just a bit ahead of time to give them time to mix well, but the effects are worth the extra step of spiralizing!

Versatility is key. Another aspect to this salad that I’ve fallen in love with and used on several occasions since making this, is just how versatile this base can be! Cucumber is often a staple in creamy dill salads, crumbled salmon and blue cheese, or vinegar and red onion. Simply using this same dressing here, the choice of vegetables tossed in could be whatever happens to be fresh in the garden or in your refrigerator at that time! A great way to freshen up and give a creative spin to items you already have!

Greek Cucumber Noodle Salad

A light and fun version of this wonderful classic salad! The cucumber changes up roles to act as the base here, a nice treat from lettuce!

Equipment

  • Kitchen knife
  • Vegetable Spiralizer
  • Mixing bowl

Ingredients
  

  • 1 medium Cucumber
  • 1 1/2 cups Cherry Tomatoes
  • 1/2 cup Kalamata Olives
  • 2-3 sliced Pepperoncini
  • 1 bunch Fresh Basil
  • 1/4 cup Crumbled Feta Cheese
  • 2 tbsp Olive Oil
  • 1/2 squeezed Fresh Lemon
  • 1 tsp Balsamic Vinegar
  • 1 clove Garlic
  • Salt and Pepper to taste

Instructions
 

  • Taking your spiralizer, make 'noodles' out of the cucumber and set aside.
  • In a mixing bowl, whisk together oil, vinegar, lemon juice, minced garlic, salt and pepper.
  • Slice tomatoes, olives, basil leaves and pepperoncini, adding about 2/3 to the bowl. Add cucumber noodles and mix together.
  • Top with the remaining sliced veggies and feta cheese. Enjoy!
    This could easily be made into a refreshing summer meal by adding some fresh chicken or salmon slices.
