Taking your spiralizer, make 'noodles' out of the cucumber and set aside.
In a mixing bowl, whisk together oil, vinegar, lemon juice, minced garlic, salt and pepper.
Slice tomatoes, olives, basil leaves and pepperoncini, adding about 2/3 to the bowl. Add cucumber noodles and mix together.
Top with the remaining sliced veggies and feta cheese. Enjoy!This could easily be made into a refreshing summer meal by adding some fresh chicken or salmon slices.
