Herbed Purple Cauliflower and Artichokes over Mahi Mahi

A great way to eat your veggies and bring color to your plate! These delicious florets soak up the fresh herbs, bringing the dish to life!

Taste the rainbow! While it is completely a mental exercise, I firmly believe food just tastes better when it looks pleasing! Purple cauliflower is such a great example of this. Deviate from the traditional green or white vegetable to bring this plate to light, and further emphasize by serving with bright lemon and fresh herbs. I used both purple and white onion to also bring out these deep hues, and diversify the flavor of your typical onion!

The bleeding heart. Artichoke hearts are a fun ingredient to play with, as they bring some nutritional benefit to the dish along with texture. For this meal, I used prepared artichokes and added them toward the end, allowing them to absorb the flavors but not become mushy. To balance these out, I would leave a bit of structure to the cauliflower for a balance with textures. As cauliflower and artichokes by themselves can be quite neutral, they are great with fresh herbs and lemon to take on these accent flavors!

Herbed Purple Cauliflower and Artichokes over Mahi Mahi

Equipment

  • Skillet with lid
  • Oven or air fryer
  • Kitchen knife

Ingredients
  

  • 2 filets Mahi Mahi
  • 1 tsp Chili Powder
  • Salt and Pepper
  • 1 small White Onion
  • 1/3 medium Purple Onion
  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 head Purple Cauliflower
  • Salt and Pepper
  • 2 sprigs Thyme
  • 2 sprigs Oregano
  • 1 sprig Rosemary
  • 2 medium Artichokes prepared
  • 1/2 squeezed Lemon
  • 1/2 tsp Italian Seasoning (optional)
  • 1/4 tsp Crushed Red Pepper Flakes

Instructions
 

  • In air fryer, or baking sheet, lay fish and season with salt, pepper and chili powder. Bake until browned on top, about 20 minutes.
  • While baking, in skillet, heat oil and add sliced onions. Sauté until fragrant.
  • Rinse cauliflower and slice florets into bite sized pieces, adding to skillet. Toss to coat in oil and season with salt, pepper, red pepper flakes and Italian seasoning. Add minced garlic.
  • As cauliflower sautés down, add a bit more oil if needed. When al dente, add chopped artichokes, stirring together.
  • As veggies cook down, add fresh herbs and adjust salt and pepper to taste.
  • To finish, squeeze lemon over pan to deglaze any seasoning.
  • Removing fish from oven, plate and top with cooked veggies. Garnish with additional fresh herbs and a wedge of lemon. Enjoy!
