In air fryer, or baking sheet, lay fish and season with salt, pepper and chili powder. Bake until browned on top, about 20 minutes.
While baking, in skillet, heat oil and add sliced onions. Sauté until fragrant.
Rinse cauliflower and slice florets into bite sized pieces, adding to skillet. Toss to coat in oil and season with salt, pepper, red pepper flakes and Italian seasoning. Add minced garlic.
As cauliflower sautés down, add a bit more oil if needed. When al dente, add chopped artichokes, stirring together.
As veggies cook down, add fresh herbs and adjust salt and pepper to taste.
To finish, squeeze lemon over pan to deglaze any seasoning.
Removing fish from oven, plate and top with cooked veggies. Garnish with additional fresh herbs and a wedge of lemon. Enjoy!
