Jalapeno Peach Salsa with Chipotle Shrimp
With appetizers, it’s nice to keep them light and fresh, paving the way for the rest of the meal. This dish is a great way to wake up the taste buds without weighing down your appetite!
Texture is key. With this dish, outside of taste, one thing I find relevant to spend time on is the variety of textures. Salsa, by nature, brings a bit of crunch with the peppers and onions, but is tamed a bit by the soft peach. Logically, the longer this sits the softer the salsa will become, so if you make this the night before be aware of that and add the peach before serving to keep that crunch as much as possible. But even more than that, while the shrimp play a support role in this dish, when seared with that spicy chipotle, it brings a great balance, unique compared to your typical tortilla chip. Keep your pan hot, and sear the shrimp quickly rather than let them boil. This will also bring out the chipotle flavor a bit more for that oh so perfect complement to the sweet!
The soft touch. Like all produce, when to buy and use your fruits and veggies is almost an art form. With some recipes, you want a firm texture to hold its shape (think sautéing), and with other recipes, an almost overripe version will be better (think desserts or jams). With this salsa, a very slight softness is the perfect texture to gently absorb the flavors of the salsa, but still hold shape. When picking your peach, it should have slight give, but not retain a dent where you applied pressure. This salsa is also a great versatile condiment for a main course and would be great over a firm fish, chicken, or shredded pork taco. Creativity is endless!

Jalapeno Peach Salsa with Chipotle Shrimp
Equipment
- Kitchen knife
- Skillet
- Mixing bowl
Ingredients
- 10-12 medium Shrimp, deveined
- 2 tsp Chipotle Powder I used smoked chipotle
- 1/2 medium Lime
- 1 medium Jalapeno
- 1/4 cup Red Onion
- 1 clove Garlic
- 1 bunch Basil (about 6 leaves)
- 1/2 cup Fresh Tomato
- 1 tender Peach
- 1 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- In mixing bowl, combine chopped tomato, onion, garlic, jalapeno, olive oil, salt and pepper and mix well. Let sit for a few minutes to combine flavors.
- In skillet, heat a bit of oil and place your shrimp, sprinkling with chipotle pepper. As they sear halfway, flip and repeat.
- While the shrimp are cooking, add the sliced peach to your salsa mixture, along with some sliced basil leaves, saving a few for garnish. Mix well and top with squeezed lime.
- Plate shrimp with a topping of the fresh salsa and a little more basil for garnish and enjoy!
