Kohlrabi Salsa Verde
Quick, easy and delicious! This salsa brings a great crunch from the kohlrabi and fresh kick from the peppers and cilantro! A perfect treat!
Gimme that crunch! There are many kinds of salsa, and for a million reasons have their differences, but one to focus on here is texture. For some salsas, the ingredients are cooked down so you have more of a paste, and others, like a pico, are raw, chopped veggies, giving a lot more texture. I opted for the latter in this version to accentuate the kohlrabi, and also to make this a bit more versatile in use. If you are not serving with chips, slices of cucumber or other veggies work just as well, or using as a garnish for fish or grilled meats! The texture will bring up a softer pairing!
Charm that tough guy façade. The kohlrabi can be a tough veggie, and I mean that literally! I’ve worked with quite a few, and some are much firmer on the outside that others. Be careful when handling, as they can be tricky to cut through. I highly recommend peeling the outer layer to pave the way to the inner vegetable, and start with large cuts to break this down. Similar in consistency to a jicama or potato, these can take some getting use to, and a sharper knife is often the secret!

Kohlrabi Salsa Verde
Equipment
- Mixing bowl
- Vegetable Peeler
- Kitchen Kife
Ingredients
- 1 large Kohlrabi about 1 cup diced
- 1/2 large Green Pepper
- 1 small White Onion
- 1 small Jalapeno (adjust to spice preference)
- 1/2 large Cucumber
- 1/2 squeezed Lemon
- 2 tbsp Olive Oil
- 2 bunches Cilantro
- 2 cloves Garlic
- Salt and Pepper
Instructions
- Slice off leaves and ends of kohlrabi and peel. Carefully dice into small pieces and add to mixing bowl.
- To the kohlrabi in similar sizes, add diced cucumber, green pepper, and onion.
- In smaller pieces, add garlic, jalapeno, and fresh cilantro.
- Squeeze lemon and add olive oil, salt and pepper. Stir well to combine. Serve with veggie slices or your favorite chips. Enjoy!Variation-for a more salsa flavor, try adding a bit of cumin and chili powder! Also great served over fish or grilled meats!
