Look no further to create a unique, flavorful, and beautiful accessory for your next dinner party! This combination pairs fabulously well aside a savory meat dish, or amongst a tray of fresh vegetables!

Overcoming the fear… I’m a fairly open minded person, but peas have always been a vegetable I struggle with. When thinking about it, I am convinced it is not the taste, but more of a small child’s aversion to textures that kept me away. As an adult, despite overcoming those obstacles, I still find peas pretty low on my list of vegetables to make, but in the name of health and maturity, I decided to get over this. In researching ways to incorporate mint, I came across a lot of accoutrements that utilized peas with the mint, and decided to put my hesitation aside-the things I do for the love of food!

Embracing my new sidekick! While I wouldn’t say I had an epiphany with peas and fell madly in love with their flavor, the learning lesson here was the…lack of flavor. This worked out really well for me as I was looking for a blank canvas to showcase my recently purchased mint! The beauty of this fabulously simple side is that it was not pretentious at all, and I found the neutral flavor refreshing. Using a few bowls, I was able to play around with some different seasonings and found curry powder added a nice unique kick-but I would not want that with my main course, since it was pronounced. But if using this dish stand alone, say as a dip, it was a fun take on the mint!

What a fun way to use that mint! This healthy side is a great complement to a savory meat, spread on toast, or enjoyed as a dip with your next veggie platter. Have fun with the colors!

Equipment

  • Immersion Blender or Food Processor
  • Saucepan
  • Mixing bowl

Ingredients
  

  • 1 tbsp Butter
  • 10 oz Peas fresh or frozen, but garden quality is best
  • 1 bunch Mint (about 4 large sprigs)
  • Salt and Pepper to taste

Instructions
 

  • In saucepan, boil peas until cooked through. Save the water.
  • In mixing bowl, combine peas, mint, salt, pepper, butter and a tsp or two of the water from the peas. Puree until smooth, adding a little more water if needed for consistency.
  • Because this is a fairly light dish, it pairs well with a flavorful protein, but be careful with using as a dip, since many of the sides will overpower the flavor. If doing so, increase the amount of mint and salt.
    Variation: if using as a stand alone dish, a dash of curry powder gives a unique flavor that stands out!
