Minted Pea Puree

What a fun way to use that mint! This healthy side is a great complement to a savory meat, spread on toast, or enjoyed as a dip with your next veggie platter. Have fun with the colors!

- 1 tbsp Butter
- 10 oz Peas fresh or frozen, but garden quality is best
- 1 bunch Mint (about 4 large sprigs)
- Salt and Pepper to taste
In saucepan, boil peas until cooked through. Save the water.
In mixing bowl, combine peas, mint, salt, pepper, butter and a tsp or two of the water from the peas. Puree until smooth, adding a little more water if needed for consistency.
Because this is a fairly light dish, it pairs well with a flavorful protein, but be careful with using as a dip, since many of the sides will overpower the flavor. If doing so, increase the amount of mint and salt.Variation: if using as a stand alone dish, a dash of curry powder gives a unique flavor that stands out!
