Peaches and Mint with a Creamy Lemon Goat Cheese Sauce
Whether as a side for brunch or a creative dessert, these peaches are brought to life with the tangy lemon and goat cheese!
KISS-keep it simple. A peach is so wonderful on its own, it is hard to even create recipes using them! Because of their brilliant flavor, I try to use subtle enhancements to bring out some undertones to further emphasize flavors. In this sauce, I use lemon juice to balance acidity, and goat cheese to give some tang, resulting in a perfect combination!
Oh so sweet! While sugar isn’t really needed, a little bit of a dessert type flavor is always appreciated. Three ingredients create that delicious combination that makes this a perfect dish for dessert or sweet brunch-pecans for a sweeter nut, mint for that fabulous herb so traditionally used for baking, and, well, sweetener! To keep my sugar count a bit lower I use a monk fruit, but no matter what your sugar version is, the natural sweet of the peach will carry this dish!

Peaches and Mint with a Creamy Lemon Goat Cheese Sauce
Equipment
- Mixing bowl
- Whisk
- Kitchen knife
Ingredients
- 1 large Peach
- 1 bunch Fresh Mint
- 1/4 cup Pecans (toasted optional)
- 1 tbsp Olive Oil
- 1/2 squeezed Lemon
- 1/4 cup Goat Cheese
- 1/2 tsp Sweetener
Instructions
- In mixing bowl, add olive oil, lemon, sweeter and goat cheese and whisk until creamy (use room temperature goat cheese).
- Slice fresh peach and mix with fresh mint. Drizzle with creamy goat cheese sauce and toss with pecans. Enjoy!
