Pureed Spinach and Asparagus Soup

Tonight calls for asparagus! And ‘green goddess’ is not reserved for a salad dressing! This soup uses those greens you already have to whip together a gorgeous and delicious first bite!

Diversify the greens! Every asparagus season, I struggle to find recipes that aren’t…cream of asparagus soup (although I have a great one), or just roasting the spears. If I’m like any others out there, a few alternatives could come in handy. While this is still soup, I wanted to experiment with some other methods that still produce a quick and delicious bowl. This version was FANTASTIC!!!! Cooking time aside, this soup came together in about 5 minutes, and made for an absolutely beautiful dish. I will be using this often in my summer routine.

Garnish is more than decoration. A word of warning. For this photo, a pop of color seemed in order. Whether that be almonds or feta (or in this case, I tried both), be mindful. When I reheated the soup later in the day, the flavor profile was a bit different. Not surprisingly, with a soup this simplistic, anything added would change the chemistry of the bowl, I just had no idea of how much. While asparagus has a strong flavor in itself, I would just be aware of how neutral spinach can be, and despite how beautiful, accessorize accordingly.

Pureed Spinach and Asparagus Soup

Try out this decadent seasonal soup for your next summer gathering! A great supporting role for the asparagus, spinach provides a smooth and neutral flavor that brings out the garlic and shallot perfectly.

Equipment

  • Kitchen knife
  • Sauce Pan
  • Immersion blender

Ingredients
  

  • 2 cloves Garlic
  • 1 whole Shallot
  • 1 tbsp Olive Oil
  • 2 hearty Handfuls of Spinach
  • 1 bunch Asparagus (about 8 medium stalks)
  • 1-2 cups Vegetable stock Preference for thickness and how long you simmer

Instructions
 

  • In a heated saucepan, heat oil and add chopped shallot and garlic to saute lightly for a few minutes.
  • Add top 1/3 asparagus spears and cook until tender. Remove and place aside.
  • Add bottom 2/3 of asparagus stalks and sauté until a fork is easy inserted. Add a few handfuls of spinach and cook until wilted. Pour in broth and bring to a soft simmer.
  • Using immersion blender (and caution), puree until a smooth paste. Pour into serving dishes and top with tops of asparagus spears.
    Note: because of the simplicity of this soup, it will absorb the flavor of any garnish used, so despite presentation, use discretion with what you use.
