Roasted Buffalo Brussel Sprouts

Looking to add a fun side to any meal? Look no further! The bold brussel sprouts tame down the buffalo sauce to create great flavors without running for the glass of milk. A nice and easy weeknight solution!

Kick up the heat! Buffalo sauce is a very versatile sauce to cook with, and can be quite hot if you’d like, but also just give great flavor. In the method of cooking here, the sauce is mixed with melted butter to create a spicy marinade that doesn’t leave your eyes watering. When roasting, a lot of the spicy burns off, leaving a depth to the flavor while it soaks in, and aids in the bit of char (a personal favorite-definitely leave these in long enough to get that crunch!). Topped with a creamy blue cheese to pull it all together, this is a great side dish even for the most sensitive palates!

Ain’t nobody got time for that! Another accidental discovery-timing. Typically when I roast brussel sprouts, I cut them in half and roast at 350 for about 40 minutes or so. This gives a nice tender and slightly crispy outside. When I was making this dish, I was cooking a fairly basic chicken main, and my brain went to buffalo sauce. Having the rest of the meal already in the works, I opted to turn the oven up to 425 and slice the brussel sprouts in fourths instead of half. The result ended in a much quicker baking time, but even better, they became tender and a lot of char, which, when combined with the buffalo sauce, was an entirely new profile than I am use to! FANTASTIC! A great mistake I will make on purpose many times over!

Equipment

  • Kitchen knife
  • Saucepan or microwavable bowl
  • Mixing bowl
  • Roasting Pan

Ingredients
  

  • 8-12 large Brussel Sprouts
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/4 cup Frank's Hot Sauce or hot sauce of your choice
  • 1/4 cup Crumbled Blue Cheese
  • 2 stalks Green Onion/Scallions
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 425.
  • Clean and slice brussel sprouts into fourths and add to mixing bowl.
  • Toss in olive oil, sprinkling with salt and pepper and placing on roasting pan, place in the oven.
  • While those are roasting, in either the microwave or stovetop, warm the butter and add buffalo sauce, mixing well.
  • As the brussel sprouts start to brown, remove and spoon about half of the sauce mixture over them, tossing lightly. Return to the oven to finish roasting. Don't be afraid of the burn-a little char on the outside gives great flavor!
  • Remove and toss with the remaining sauce.
  • Top with crumbled blue cheese and sliced scallions. Enjoy!
