Roasted Salmon Sushi Bowl with Cauliflower Rice and Spicy Mayo
A healthy alternative for your sushi craving! This salad brings all of the flavors you desire with a generous heaping of vegetables! Forgo the rice for this refreshing dish!
All in the cure. Lately, I have been on a learning experience with preserved fish. Salmon in particular. My go-to for an appetizer has always been smoked salmon. It has a great flavor and is usually readily available. Recently, I was at a new store and discovered quite a few varieties of lox, which inspired a new breakfast dish. This was a pleasant change, as it did not have the smoked flavor, but was a more fresh taste, as it’s cured in salt water. As I was shopping for a holiday party, nestled next to the smoked salmon was this ‘roasted salmon’. I may never go back! This flavor was so fresh it almost didn’t taste preserved at all, making it a great feature in this sushi bowl!
The glue that holds it all together. Sushi just wouldn’t be sushi without the rice. And as you get to know the preparation involved with good sushi, there is much care and pride taken in the rice itself! While I was trying to make this a lower carb dish, there was no way I was going to escape a binding element to substitute for rice. Cauliflower stepped up to the plate and made an incredible save! By simmering this until it is rice consistency, and slowing adding soy and ginger, the flavors of a sushi roll are brought to the bowl without needing to add additional condiments after. By cooking these three ingredients together, it also gave time for the cauliflower to absorb those flavors, making a more complete profile in every bite!

Roasted Salmon Sushi Bowl with Cauliflower Rice and Spicy Mayo
Equipment
- Mixing bowl
- Kitchen knife
- Skillet
Ingredients
- 1 cup Cauliflower Rice
- 1 tbsp Soy Sauce or Liquid Aminos
- 1 tsp Grated Ginger
- 1/2 medium Cucumber
- 4 medium Radishes
- 1 large Avocado
- 2 medium Carrots
- 2 handfuls Spinach
- 2 handfuls Shredded Cabbage
- 4 oz Roasted Salmon (could use smoked, lox, or other)
- 2 sheets Dried Seaweed Snack
- 2 tbsp Mayonnaise
- 1 tsp Chili Garlic Sauce (or hot sauce of choice)
- 1/4 medium Lemon
- 1 tsp Sesame Seeds
- 2 stalks Scallions
Instructions
- In mixing bowl, combine mayo, hot sauce, and squeezed lemon and mix well. Set aside.
- In skillet, cook the cauliflower rice per instruction. When almost done cooking, add soy sauce/aminos, and grated ginger. Stir well and turn off heat. Set aside and allow to cool.
- In your dishes, plate spinach and cabbage. Layering on top matchstick cut carrots, cucumber, radishes, slices of avocado, and crumbled salmon.
- Spoon on the cauliflower rice.
- Drizzle with spicy mayo dressing, and garnish with strips of seaweed snack, sliced scallions and sesame seeds. Enjoy!
