Unwrapped Sausage and Cabbage Eggroll
Trying to maintain that low carb resolution, but craving some take-out comfort food? This great option comes together quickly and is easily adaptable to what you already have at home! A perfect weeknight meal!
Choosing that protein. A quick internet search will show you many variations of this recipe (sorry, this is not my original creation), but each with subtle differences, one of which is often the meat. I’m a huge fan of using what you have, so if there is ground turkey or beef in your freezer-bring it to the table! Not a meat eater? This is great with tofu or tempeh! The reason I chose pork is because of the sweet flavor that is more reminiscent to me of that iconic eggroll flavor. With the acidity of the soy/aminos, I find having a little of the pork grease combats this well, with the cabbage as a perfect absorbent to bring the whole dish together!
Master of versatility! While this dish is intended to replace the comfort of an eggroll flavor….let your hair down and run with the wind a bit! With the leftovers from making this dish, I found myself opening my fridge doors and embracing my inner Jackson Pollock with all sorts of ingredients into the skillet. Leftover broccoli florets? Sure! Baby bella mushrooms? Why not! That half of a green pepper that looks like its snarling at you? Well, ok then! Keep in mind that you might need to toss a bit more of the sauce mixture together, but welcome one and all to the part as you see fitting!

Unwrapped Sausage and Cabbage Eggroll
Equipment
- Kitchen knife
- Large Skillet or Wok
- Mixing bowl
Ingredients
- 1 lb Pork Sausage
- 1 head Green Cabbage
- 4-5 medium Carrots
- 3 cloves Garlic
- 4 stalks Scallions
- 1 tbsp Fresh Ginger
- 1 tbsp Sesame Oil
- 2 tbsp Liquid Aminos (soy sauce if not keto)
- Toasted Sesame seeds optional for garnish
Instructions
- In a mixing bowl, whisk together garlic, ginger, sesame oil, and aminos.
- In skillet or wok, cook the sausage until brown. Cut your carrots like matchsticks and add those in along with scallions (save one for garnish). Sautee until fragrant.
- Fold in shredded cabbage and cook until wilted.
- Pour in the oil mixture and stir until combined.
- Plate and serve with additional chopped scallions and toasted sesame seeds for garnish. Great alone or served over rice. Enjoy!Variation: this is really great with additional ingredients to create more of a stir fry meal-try out with mushrooms, onions, peppers, or broccoli to increase your veggies!
