Grilled Barramundi with Radish and Cilantro Salsa

A refreshing way to enjoy those spring radishes over a hearty fish, that paves way for a light summertime dinner!

Radish Salsa
- 6-8 medium Radishes
- 1/2 fresh Jalapeno
- 3-4 sprigs Cilantro
- 2 stalks Green Onion
- 1/4 squeezed Lemon Juice
- 1 tsp Olive Oil
- 1/2 tsp Salt
Pairing Suggestions
- 2 fillets Barramundi Fish or other hearty fish
- 2 cups Broccoli and Cauliflower 'rice'
In mixing bowl, add chopped radishes, chopped jalapeno, lemon juice, olive oil, loosely chopped cilantro and salt.
Slice green onion using mostly the white and light green for texture. Add to mixing bowl and mix well. Set aside.
Cook fish in method desired. I find having a grill or grill substitute gives a nice edge that adds to the dish, but definitely not needed. Because of the flavors in the salsa, little more than salt and pepper would be needed on the fish.
In skillet, sauté the 'rice' blend to remove most of the moisture, then add a little dab of butter and salt to your liking.
Serve with an additional slice of lemon and cilantro. Enjoy!
