Grilled Barramundi with Radish Cilantro Salsa

Surprising contrast, delicious hearty flavor, and all around refreshing summertime meal! The radishes are tamed by the lemon and with just a little kick from the jalapeno, this fish does not need any other seasoning!

Move over tomato! I’m a huge fan of salsa. I find it to be so versatile, from a simple dip or salad dressing, to topping for meat. But, I have my typical go-to varieties, and they usually involve some form of a tomato and/or pepper. Thinking of the radish, I was nervous to try out a rendition because of the bitterness that often comes with these little red beauties. To help that out a bit, I made the salsa as my first step, tossing occasionally to keep it marinating in the liquid mixture. The result was perfect! It may have been overpowering with a lighter fish, but paired over this heartier variety, the salsa was a true condiment, adding brilliant flavor and a fresh crunch to the plate!

A rose by any other name would smell as sweet. Many of you may know that I often use a substitute for carbs on my plates, in many forms, but often with cauliflower ‘rice’. Recently, I came across a blend of cauliflower and broccoli in one bag (yep, found in the frozen vegetable section and a life saver for time over making your own-although hats off to you if you do). What I have found is the cauliflower ‘rice’ on its own has a bit more of a bland flavor, and emulates rice more closely. This gem of a mix has a bit more crunch, and while it doesn’t have a strong broccoli flavor, it does bring more to the table. With lighter meats like fish, I like to use this blend to give a bit more texture.

  • Mixing bowl
  • Skillet
  • Grill skillet or oven work too

Ingredients
  

Radish Salsa

  • 6-8 medium Radishes
  • 1/2 fresh Jalapeno
  • 3-4 sprigs Cilantro
  • 2 stalks Green Onion
  • 1/4 squeezed Lemon Juice
  • 1 tsp Olive Oil
  • 1/2 tsp Salt

Pairing Suggestions

  • 2 fillets Barramundi Fish or other hearty fish
  • 2 cups Broccoli and Cauliflower 'rice'

Instructions
 

  • In mixing bowl, add chopped radishes, chopped jalapeno, lemon juice, olive oil, loosely chopped cilantro and salt.
  • Slice green onion using mostly the white and light green for texture. Add to mixing bowl and mix well. Set aside.
  • Cook fish in method desired. I find having a grill or grill substitute gives a nice edge that adds to the dish, but definitely not needed. Because of the flavors in the salsa, little more than salt and pepper would be needed on the fish.
  • In skillet, sauté the 'rice' blend to remove most of the moisture, then add a little dab of butter and salt to your liking.
  • Serve with an additional slice of lemon and cilantro. Enjoy!
