Peel hard boiled eggs and set aside.
Divide the pork into four equal sections and flatten well. Mold each egg with a piece of sausage, covering entirely. This helps if the eggs are dry, so if freshly peeled, you may need to pat them off.
Pouring your breadcrumbs onto a plate or shallow dish, roll each egg so it is fully coated.
Place in air fryer for about 16-18 minutes, turning halfway through, until the outside is browned and sausage is cooked through.
While these are cooking, in a mixing bowl, combine mayonnaise, mustard, curry, cayenne, salt and pepper and mix well to form a sauce. Adjust seasoning to taste.
Removing eggs from air fryer, place on a paper towel for a minute or two to absorb any excess oil.
Slice in half and serve over greens with a dish of sauce. Enjoy!
