A hostess with the mostest. I love hosting company over great food, no matter what meal of the day this is. A bonus is when I can show some new ingredients or recipes and put together a good looking spread. That being said, I also love actually enjoying their companionship! No one wants to have company over and spend the whole time standing over the stove. This is a great solution that is impressive in presentation, and not only easy, but can also be made ahead of time! Roll your eggs in sausage, whip up that sauce, and when the guests come, pop in your air fryer for an effortless plate that looks like you spent all afternoon preparing!

It’s what on the inside that matters. Not just cooking with your heart, but that beautiful yellow yolk. Debatable with this classic dish, but often the egg yolk is served soft. To each their own and adjust the recipe below to fit your style, but I find when putting these out for a crowd, I error on the side of fully cooked vs soft to please all and also stay fresh a bit longer. A soft yolk is best when eaten immediately, and a bit more challenging to time correctly. When I do Sunday prep for the week, I typically have a dozen hard boiled eggs in my fridge for salads already, so this came together in minutes with ingredients I already had, making it an easy weekend brunch. Keto Air Fried Scotch Eggs with a Curry Dijon Sauce

This easy version of a classic traditional favorite embraces the flavors of curry and pork, but comes together in minutes!

  • Mixing bowl
  • Air Fryer

Ingredients
  

  • 4 medium Hard Boiled Eggs
  • 14/-1/2 lb Ground Pork I used country style
  • 1/4 cup Panko I used Keto version
  • 2 tbsp Mayonnaise Could sub Greek Yogurt
  • 3/4 tbsp Dijon Mustard
  • 1/2 tsp Curry Powder
  • 1/4 tsp Cayenne Pepper
  • Salt and Pepper to taste

Instructions
 

  • Peel hard boiled eggs and set aside.
  • Divide the pork into four equal sections and flatten well. Mold each egg with a piece of sausage, covering entirely. This helps if the eggs are dry, so if freshly peeled, you may need to pat them off.
  • Pouring your breadcrumbs onto a plate or shallow dish, roll each egg so it is fully coated.
  • Place in air fryer for about 16-18 minutes, turning halfway through, until the outside is browned and sausage is cooked through.
  • While these are cooking, in a mixing bowl, combine mayonnaise, mustard, curry, cayenne, salt and pepper and mix well to form a sauce. Adjust seasoning to taste.
  • Removing eggs from air fryer, place on a paper towel for a minute or two to absorb any excess oil.
  • Slice in half and serve over greens with a dish of sauce. Enjoy!
