Slivered Sugar Snap Peas with a Honey Goat Cheese Vinaigrette

A refreshing and easy salad for those spring veggies! A little sweet from the honey paired with fresh basil really brings this salad to light, perfect for a quick side or dish to pass!

- 2-3 handfuls Sugar Snap Peas
- 6-8 leaves Fresh Basil
- 2 oz Goat Cheese
- 1/4 cup Cranberries
- 1/4 cup Slivered Almonds toasted or plain would work
Dressing
- 1 tsp Honey
- 1 tsp Apple Cider Vinegar
- 1 oz Goat Cheese
- 1 tsp Olive Oil
- Salt and Pepper to taste
Finely chop the snap peas into thin diagonal slices.
In a mixing bowl, combine dressing ingredients and whisk until smooth.
Pour dressing over the sliced snap peas and toss well.
Serve with additional goat cheese, cranberries, almonds, and basil leaves. Enjoy!
