Slivered Sugar Snap Peas with a Honey Goat Cheese Vinaigrette

An easy and delicious summertime salad that brings all the crunch of those seasonal vegetables, with a sweet undertone of honey and basil! Perfect for those hurried weeknight meals or to impress a crowd!

Pass the peas, please! Growing up, I never really loved peas. I think it was more of a texture thing than a flavor, but it never became a natural vegetable in my cooking routine. Because of this, I was fairly excited to use these crunchy spring veggies and experiment! I found slicing them like this julienne cut took away the famous outside ‘string’, but didn’t sacrifice any texture. Added bonus was that this also allowed the peas to absorb more of the dressing, which, trust me, is a HUGE perk!

Oh Honey, you’re so sweet! I rarely cook with sweeteners, so this was a little outside of my comfort zone, but given the vinegar in the dressing, I wanted to balance out to allow the goat cheese to really show through. Word of warning, be careful of liquid to cheese ratio-I did find after whisking, this could easily become too runny, so would suggest adding ingredients a bit at a time, and playing with quantities of cheese if you prefer a thicker sauce. Although, having a little more liquid allowed the peas to get a quick marinade which worked in my favor! Definitely worth the experiment and this will be in the rotation for another meal very soon!

Slivered Sugar Snap Peas with a Honey Goat Cheese Vinaigrette

A refreshing and easy salad for those spring veggies! A little sweet from the honey paired with fresh basil really brings this salad to light, perfect for a quick side or dish to pass!

Equipment

  • Kitchen knife
  • Mixing bowl
  • Whisk

Ingredients
  

  • 2-3 handfuls Sugar Snap Peas
  • 6-8 leaves Fresh Basil
  • 2 oz Goat Cheese
  • 1/4 cup Cranberries
  • 1/4 cup Slivered Almonds toasted or plain would work

Dressing

  • 1 tsp Honey
  • 1 tsp Apple Cider Vinegar
  • 1 oz Goat Cheese
  • 1 tsp Olive Oil
  • Salt and Pepper to taste

Instructions
 

  • Finely chop the snap peas into thin diagonal slices.
  • In a mixing bowl, combine dressing ingredients and whisk until smooth.
  • Pour dressing over the sliced snap peas and toss well.
  • Serve with additional goat cheese, cranberries, almonds, and basil leaves. Enjoy!
