In mixing bowl, combine all sauce ingredients. Using either the whisk or immersion blender, beat until very smooth and creamy. Alter lemon and olive oil liquids to get desired consistency.
Spread sauce on a serving plater (use creativity with peaks and/or design!).
In mixing bowl, combine peas, cucumbers, artichokes, olives (if using), lemon, olive oil, salt and pepper and stir together well. Add mixed greens and toss.
Dish salad mixture over the cheese spread. Garnish with lemon wedges and a drizzle of olive oil. Enjoy!
