Sugar Snap Pea and Cucumber Salad with Lemon Herbed Cheese

Fresh and refreshing! The snap from the peas and cucumbers are such a great pairing to a tangy lemon and herb base! Great for those summer night side dishes!

Say cheese, please! This salad was an accidental surprise for sure. My original plan was to use ricotta cheese and whip this up with lemon and herbs (still a great idea if you’d like to stick with the plan). In opening my fridge, I was met with an empty container. Next option-cottage cheese. As a fairly neutral white cheese, I decided to give this a run for its money. Holy smokes was I in for a treat! The garlic and lemon steal the show here, so your cheese is a binding element, which might have actually been better than the original plan! I would suggest using the immersion blender if you venture into cottage cheese land, as it whips this up so much better than the whisk.

A time to show off. In many cooking shows or recipe, you may hear the term ‘finishing oil’. For a lot of my cooking, I find the cost of this type of oil doesn’t warrant getting lost in the dish with standard cooking. But, like a fine truffle, there are those few times when it really does make all the difference (think fresh tomato sliced from the garden, or topping off a perfectly seared scallop). While this salad is nothing like the fine cooking typically calling for a great oil, I would just suggest not using your average cooking oil. No need to go top shelf, but a solid game-day rail selection for the crowd type of oil. The lingering taste will be worth it!

Sugar Snap Pea and Cucumber Salad with Lemon Herbed Cheese

Equipment

  • Mixing bowl
  • Kitchen knife
  • Whisk or immersion blender

Ingredients
  

Dressing

  • 1/2 squeezed Lemon
  • 1 clove Garlic
  • 2 tbsp Olive Oil
  • 1 sprig Rosemary
  • 1 sprig Thyme
  • 1 sprig Oregano
  • Salt and Pepper
  • 3 tbsp Cottage Cheese could use ricotta

Salad

  • 1 1/2 cups Sugar Snap Peas
  • 1 medium Cucumber
  • 1/2 cup Prepared Artichokes canned works great here
  • 1/4 squeezed Lemon
  • 1 tsp Olive Oil
  • Salt and Pepper
  • 1/4 cup Kalamata Olives (optional)
  • 2 handfuls Mixed Greens (also great with arugula)

Instructions
 

  • In mixing bowl, combine all sauce ingredients. Using either the whisk or immersion blender, beat until very smooth and creamy. Alter lemon and olive oil liquids to get desired consistency.
  • Spread sauce on a serving plater (use creativity with peaks and/or design!).
  • In mixing bowl, combine peas, cucumbers, artichokes, olives (if using), lemon, olive oil, salt and pepper and stir together well. Add mixed greens and toss.
  • Dish salad mixture over the cheese spread. Garnish with lemon wedges and a drizzle of olive oil. Enjoy!
