Zucchini Noodle Salad with Smoked Salmon and Artichokes
Salty olives and smoky salmon make for the perfect dressing in this pasta salad! Great to add any additional veggies for a heartier dish!
Quality over quantity. Most of these ingredients, by themselves, like to play the star of the show-kalamata olives, smoked salmon, capers, feta, garlic…they are all standout flavors! For this sauce, instead of drowning these out with other liquids, I kept things really simple with just olive oil and lemon, and instead was loose with my measurements on the olive and caper liquids, adding to the sauce without overcomplicating things! With the amount of flavors represented, be careful to not add much in the way of salt or seasoning, as these come prepared!
The supporting act. Pasta salad works well against strong ingredients because of its neutrality. Noodles absorb whatever is added to them, obviously making the ideal base for so many dishes. Here, substituting zucchini for the flour based standard, the neutral characteristic continues, and the veggie picks up these great tastes and enhances them throughout the whole meal. Perfect to give a few minutes to sit before enjoying to really soak up all of those flavors!

Zucchini Noodle Salad with Smoked Salmon and Artichokes
Equipment
- Vegetable Spiralizer
- Kitchen knife
- Mixing bowl
Ingredients
- 2 medium Zucchini
- 4-6 oz Smoked Salmon could use any cooked salmon
- 1/2 cup Feta Cheese
- 1 cup Artichokes
- 1/3 cup Kalamata Olives
- 1/3 cup Green Olives
- 1 tbsp Capers, with liquid
- 2 sprigs Parsely
- 2 cloves Garlic
- 1/2 squeezed Lemon
- 2 tbsp Olive Oil
- Salt and Pepper
Instructions
- Using spiralizer, create zucchini noodles. Set aside.
- In large mixing bowl, combine lemon juice, olive oil, capers with liquid, sliced olives with liquid, garlic, parsley, salt and pepper. Mix well to combine.
- Taking smoked salmon (or cooked and cooled salmon), break into pieces and add in, along with most of the feta cheese. Toss to incorporate.
- Add zucchini noodles and mix. Allow to sit for a few minutes to absorb flavors before serving.
- Plate with additional crumbled feta cheese and lemon or parsley garnish. Enjoy!
